Cheese and Chili

I've been working all evening on my article for my Magazine Article Writing class. It's a How-To article and the topic is.... Food Blogging! I have to tell you, I'm learning alot about food blogging that I didn't know!

I took a break around 8pm to finally make Kris and I supper. I knew that I wanted some of mom's buffalo chili that she sent home with me, but I knew that I should try to get some more veggies into my body today. So I decided to do a Sandwich and Chili combo.

Grilled Veggie and Cheese Sandwich with Buffalo Chili


I was inspired by Tina's broccoli and cheese sandwich today, so I decided to try something similar. I steamed some frozen veggies (carrots, squash, onions, asparagus, green beans). Meawhile, I lightly toasted some whole wheat bread, then spread one side with roasted red pepper hummus and put a slice of Chipotle Cheddar Cheese on the other side. I filled the sandwiches the steamed veggies, along with fresh tomato slices and spinach. Then I sprayed both sides of the sandwich with olive oil spread, sprinkled on some parmesan cheese and garlic salt, then "grilled" them in large pan, covering them to melt the cheese.

I think I might have added a tad too much garlic salt, but otherwise these sandwiches were delicious. The pre-toasting is key to making the sandwich stay together during grilling. Just make sure you don't grill them at too high of heat (I kept mine on medium-low) or you'll burn the outside of the bread before the insides are heated and the cheese is melted.

I topped the chili with some lowfat mozzarella.

For dessert I had a small cup of blueberry frozen yogurt.
Exactly what I needed.

Ok, time for bed. How 'bout them Phillies?! 10-2 right now. Insane.
