Snow. Yuck.



Before I left for my parents' house this morning I discovered a hidden box of autumn decorations underneath the bed in our guest room. I was really excited, but now I feel like I should be putting up Christmas decorations!!!!



I stopped at River Rock Cafe here in St. Peter and grabbed my mom and I two 'Guiltless Caramel Lattes'. Their coffee shop is all organic and eco-friendly, and their coffees are amazing. It was exactly what I needed on this blustery Minnesotan day.


I also ate a Pistachio Larabar on the way.


I wasn't real hungry for breakfast, so this was perfect. I like this flavor, but I wish it was a little more 'pistachio-y'. The flavor isn't real potent... and I LOVE pistachio. When I was in Italy I ate pistachio gelato almost every day. YUM.

It was fun talking wedding stuff with my mom. I'm excited to start planning. We want to have the wedding around this time next year (maybe earlier in October so we don't have to deal with SNOW). A year sounds like a long time, but with all the stuff that goes into a wedding, it's really not! I better get crackin'.

While I was there, I did some snacking. First, I had a piece of apple pie/crisp that my family had picked up at the church bake sale that morning. Delicious.


Later on I had some of my mom's homemade pita chips with salsa. She buys Herdez salsa from Aldi and adds her own dried cilantro to it. It's good, but I like our fresh salsas better.



Right before I left I also had some veggies and homemade buttermilk ranch dip.


I got sent home w/ a bunch of goodies! Fresh veggies, buffalo chili, a whole frozen chicken and two pounds of ground buffalo. I think I'll have the chili for dinner tonight.



Well I better start on my homework. :-( What a depressing day.

Yikes!! So much snow!! Ahh, I'm not ready for winter yet :0(

I'm studying for the 3 midterms that I have on Tuesday, so I feel your pain about the homework - hang in there!!
