Belated Weekend Recap (Warning: Long post!)

I have been soooooo busy this weekend, sorry guys! But now I am finally done with everything: Kris's birthday shenanigans are over, I'm done babysitting and my paper is written, reviewed and rewritten. So I can finally concentrate on something more fun: blogging! :-)

Saturday night, Kris's friend bought the Pay-Per-View UFC fight and had a bunch of people over for Kris's birthday. I know ultimate fighting is bloody and gruesome, but there's something about I absolutely LOVE. Especially when it's live. Before I die, I have got to see one. Saturday night's was especially awesome, since it was between 31-year-old Brock Lesnar (South Dakota-native and former Minnesota Gopher wrestler) and 45-year-old Randy Couture, five-time UFC champion. Lesnar one by a referee-decided knockout. Quite exciting.

Before the fight, Kris and I had met our friends Paco and Stacia at Applebees for dinner and drinks. I ordered the Santa Fe salad, which was HUGE, but very delicious. It came with grilled chicken, pico de gallo, guacamole, cheese and tortilla strips. (Dressings on the side). I ate about 1/3 of it and brought the rest home. I also had one Miller Lite with dinner.

After the fight, we went downtown to the bars. I was our DD, but I still had alot of fun. We had a large group and everyone seemed to be having a good time. We went back to Kris's friend's apartment for some latenight pizza. Here's my piece: pepperoni, from Gary's Pizza. Their sauce is really sweet and they LOAD on the toppings (underneath a ton of cheese, of course). Good for me? No. Delicious? Yes.

The next morning I woke and made myself and Kris (who was slightly hung over, haha) some yummy egg sandwiches with mushrooms, onions and cheese. I was out of egg whites and egg beaters, so I used real eggs. I haven't had real eggs in a long time! I used three eggs to make both sandwiches.



Then I headed over to North Mankato to babysit these adorable little guys:


I have been watching them since the youngest was a newborn, three years ago. It's amazing to see how much they've grown!

Lunch was kid-friendly macaroni and cheese, made with real cheddar cheese and honey dijon mustard. Last time I made this for them, I tried to "health it up" by adding tuna and peas and they wouldn't touch it. :-( So this time I tried to make my secret ingredients less visable, and it worked!



We had canned peaches in sugar-free syrup, too.


Later on, I snacked on some Planters Trail Mix that I found in their pantry while we watched Alvin and the Chipmunks. :-)



I got home around 7, and Kris was off playing basketball. He called me on his way home and said he was going to pick us up some sandwiches for supper, since we were running low on groceries. I told him to surprise me.

He picked up an Italian sub on white and a turkey & ham sub on wheat from Erbert & Gerberts, and we each swapped a half so that we could try both. He also got us both a cup of soup- mine was Chicken Wild Rice. Yum. It was a little heavier of a dinner than I would have made for myself, but it was sweet of him to get it so of course I didn't complain. Plus, I LOVE E & G.


The stuff in the bottom of the picture that looks a little like mashed potatoes is actually what's called "The Guts" from Ebert & Gerberts. They scoop out the middle of the bread, so that all the fillings fit inside the sandwich and then they give you "The Guts" on top! It's perfect for dipping in soup, and is honestly the best part of the meal.

Instead of adding on my eats from today to this already marathon-esque post, I'll just recap today at the end. Until then, fellow blog readers!

That looks like so much fun. I'm with you, being the DD can STILL be a blast (I don't drink).
That pizza looks CRAZY good. I just want to take it off the screen and dip it in ranch dressing!
