Birthday Treat: Pumpkin Apple Butter Pie with Toffee Struesel Topping

Ok FINALLY. The scrumptious birthday treat recipe I've been promising all weekend!! I originally wanted to make Recipe Girl's Dulce de Leche Pumpkin Pie but the store in my town doesn't care dulce de leche. Bummer. So after Googling a few different pumpkin pie recipes, I decided to take advantage of the huge jar of apple butter in my fridge to come up with my own special recipe!!

Pumpkin Apple Butter Pie with Toffee Struesel Topping

  • 1 cup pumpkin puree
  • 1 cup apple butter
  • 1/3 cup light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 3 eggs, beaten
  • 1 cup evaporated milk
  • 1 deep dish frozen pie crust
Topping:
  • 1 tablespoon butter or butter substitute (I used Brummel and Brown)
  • 1/4 cup light brown sugar
  • 2 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/8 cup chopped walnuts
  • 1/8 cup toffee bits


1. Preheat oven to 350 degrees.

2. Remove pie crust from freezer.


3. Mix together first 7 ingredients.

4. Mix together eggs and evaporated milk.

5. Combine dry ingredients with the wet ingredients until well mixed.

6. Pour batter into pie crust.


7. Bake for 60 minutes, or until a knife inserted 2 inches from the center of the pie comes out clean.


8. Sprinkle struesel topping onto pie. Bake 15-20 minutes longer.


9. Let cool. Serve with whipped cream and additional toffee bits, if desired.


To make struesel topping:

1. Combine butter, brown sugar, flour and cinnamon with a fork, until mixture looks like coarse crumbs.

2. Add walnuts and toffee bits. Stir to mix.

This was unbelievable good! The frozen pie crust makes it very easy. And you don't use a ton of dishes, so clean-up is a breeze as well. :-)
