Ahhh.... what a day. I had one of those days at work, where it ends and you're just like, "I don't even want to think about this ever again. Just hand me a drink, and make a double." You know what I'm talking about, right?

To sum things up... a new child started at the preschool (think Problem Child times 7), my assistant teacher was 2 hours late and my afternoon high school helper didn't even show up. Luckily, I had a TON of energy today and was able to pull through it without having a major breakdown. I have honestly never meant this more than I do right now: THANK GOD IT'S FRIDAY!

Ok.... so LUNCH. One word: Amazing. I made another salad (if you haven't noticed by now, salads are my fav "lunch eats") that was LOADED with tons of veggies.




Roasted red peppers, broccoli, cauliflower, alfalfa sprouts, chickpeas, hummus (under the chickpeas, I was inspired by Kath to do this!), tomatoes and, of course, mushrooms.




(Note: Other eats of the day included a Honey Crisp apple, two celery sticks with peanut butter and a chocolate brown Z-bar)

After work I jetted over to Mankato to do some quick shopping at Kohl's. I had a coupon for this weekend to take 20% off my entire purchase (yay!). I needed a grey jacket/sweater-type thing, and a small gift to give Kris tomorrow for his 29th birthday. :-) I ordered his REAL gift online and he won't get it until next week, so I wanted something small to wrap up and give to him tomorrow.

For dinner, Kris and I met my family (Mom, Dad, brothers and brother's girlfriend) at Whiskey River, a restaurant here in the town we live in (my family lives about 20 minutes away). Sad thing is, I forgot my camera!!! Which really is a tragedy, since my meal was absolutely fantastic and quite photogenic!

HOWEVER, I found a picture that looks almost exactly like my meal: Grilled halibut with artichoke hearts, tomatoes and mozzarella cheese.


Well, one of Kris's buddies is at our place right now, helping to ring in Kris's last year as a spry twenty-something. :-) I'm not sure if we'll go out tonight at all, since we have alot to do tomorrow! (I'm bring Kris to see our reception venue!!!!!)
