From Monday On, My Cares Are Gone...

Doesn't it just feel fabulous to be done with a Monday? We're THAT much closer to Friday night! :-)

Breakfast this morning was eaten while hurrying to finish up my article; I definitely have senioritis right now... 3 more weeks left!!! I ate a strawberry Luna Sunrise Bar while churning out a 1200-word personal experience article in 2 hours. If there's one thing I can do, it's write under pressure.


Lunch was definitely the star meal of the day. I made crunchy lettuce wraps out of big hearts of romaine lettuce leaves. I filled two leaves with turkey, chickpeas, alfalfa sprouts, feta cheese and honey mustard dressing. I had a big bunch of grapes on the side. PERFECT lunch.



After work and class (in which we got our last articles back and I got a 50 out of 50!) I debated on going to the gym... I've really been slacking lately and I hate it! I didn't work out ALL weekend and I'm starting to feel like icky. But I was absolutely starving, and I hadn't brought anything with me to eat. I'm short on money right now, and I didn't want to spend any on a snack. So I bargained with myself- I'd go home and make supper tonight, but tomorrow when I get off work I am heading STRAIGHT to the gym. Tuesdays are normally rest days, but this week is going to be switched up. I'm sure I will feel much better after a good work out tomorrow.

Dinner tonight was an interesting concoction. As I mentioned earlier, we are pretty low on groceries but neither of us have had time (or the money) to go! So I scrounged around for random ingredients to fill my other deep dish frozen pie crust. It ended up being quite delicious!

Black Bean and Broccoli Pie



The filling consisted of black beans, fresh broccoli, a can of cream of mushroom soup, plain chobani yogurt, fresh salsa, hot sauce and spices (chili powder, cumin, mexican oregano & black pepper). I poured it into the pie and baked at 425 for 30 minutes, then topped it with cheese and baked it for 3 minutes longer. My "pie" didn't exactly hold its' shape, and the bottom crust was kind of soggy. If I made it again I would maybe add some eggs into it and bake it longer, at a lower temp. Trial and error!

Had a simple side salad with it: lettuce, feta cheese and light honey mustard dressing. (I found this dressing in the dollar section at my local grocery store and I LOVE it!)

I felt the need for dessert tonight. I had blueberries & cream fozen yogurt, topped with microwaved berries, sugar free cool whip and granola. MMMMMMMMM.



Well, I am off to bed! It's 10:07 right now and TOO late for my to be up! Oh how I wish there were more hours in the day. Goodnight all!

That luna bar looks great. I haven't tried the sunrise versions! I love your random dinner mix- it looks like it turned out really well! Nice work :) Hope you have a good Tuesday!
