I'm baaaaack!

I took a little vacation guys. With the end of the semester closing in (I graduate next Saturday!!!), job searching, Thanksgiving, working, babysitting.... I needed one less thing to do for a week!

But now I'm back and ready to blog! And I have some very exciting news.

WE HAVE KITTIES!!!!!


Kris and I adopted two adorable little orange kitties, which we named Cheeto (male) and Pippi (female). They are brother and sister and were rescued October 9, 2008 in Blue Earth, MN. Each of them weighed 2 7/8 pounds and were estimated to be six weeks old. They were very sick for a while and spent 3 days in the pet hospital. They both rebounded wonderfully, right around Thanksgiving time. They are now healthy, loving and active kittens!



And we love them. They are so much fun to watch, Kris and I barely pay attention to the television anymore!

This morning I had a delicious breakfast: an Egg Beater omelet with pepper turkey, broccoli and asiago & mozzarella cheese.


I had a cup of Starbucks brand Christmas coffee with it.


Today my plan is to hang out with my kitties, watch a Christmas movie, go to church, and be sober driver for Kris and his friends. Tomorrow I babysit my boys all day, it should be fun! I love being with kids around Christmas time, they make it so much more fun!

I'm going to leave you with a few pics of Thanksgiving eats. My mom's pumpkin cranberry stuffing, fresh baked rolls and pumpkin pie. YUM.

I had quite a long day today. Quick breakdown: work, meeting, work, doctor appointment, workout, kris's basketball game... I just got home and all I want to do is SLEEP, SLEEP, SLEEP!

So, quickly, here are today's eats (or, at least, what I took a picture of):

Breakfast was a HUGE, FILLING egg white omelet with a diced chicken sausage and sauteed mushrooms in it. And a teeny, tiny bit of cheese (there was cheese inside the chicken sausage, so it didn't need much!)

Soooooooooo good.


Lunch was a quick sandwich I threw together before leaving the house today. Turkey, provolone, lettuce and tomatoes w/ fat free miracle whip. Sounds boring, but it's one of those sandwiches that reminds me of being little. When things were simple.



My workout did feel awesome, but I think I might have overdone it a little bit, since I was feeling so guilty for my long gym hiatus. 6 miles on the treadmill, 3 on the bike, plus abs and short upper body workout.

By the time I finally got home tonight I was too tired to cook my planned dinner (a surprise for tomorrow, then!) so I just ate a bowl of cereal. I was too exhausted/hungry to even bother taking a picture. Don't worry, you didn't miss much. It was cinnamon puffins and Fiber One. Meh.

I woke up in a pretty good mood this morning! Hopefully it continues throughout the day... :-)

I made a VERY FILLING and delicious breakfast: Egg White Omelet with asparagus, mushrooms, turkey, turkey bacon and feta cheese. Talk about protein-packed! I was going to have half a banana, too, but I'm just too full!!



So I'm off to work! It's supposed to snow tonight... the kids always seem to act up when it's going to snow. Let's pray that they don't!

And in wedding news... we booked the church for our ceremony! Now.... what's next?!?

I woke up this morning to a blanket of white snow covering the world outside my window. It was lightly snowing and everything looked so peaceful. It looked like Christmas morning on a Hallmark movie.

The first real snow always puts me in a giddy mood. (I think it puts everyone up here in North Country in a giddy mood, whether they will admit or not.)

My breakfast this morning was absolutely delicious. An egg white omelet with mushrooms, tomatoes, turkey bacon and mozzarella cheese. YUM.


Around 10 am I heard a loud growl erupt for my stomach. So I dove into my lunchbag a litte early and ate a small bag of grapes.


My lunch was UNBELIEVABLE. And very pretty, too. I made a Tuna Club Salad w/ lemon pepper tuna, crumbled turkey bacon, tomatoes, cauliflower, celery, cheese and Kashi crackers for crunch. I drizzled on a tiny bit of Kraft Fat Free Honey Dijon Dressing.


I also had another Honeycrisp Apple, but for some reason my apple pictures never turn out!

Well, I'm off to deal with some wedding stress- big families makes it hard to set a date!

I've just been so busy lately, I hate that I haven't been fitting my 3-a-day blog posts in! Heck, yesterday I couldn't even get one in. :-(

I guess we need a recap. I'm going to just do the highlights since alot of my eats lately have been repetitive- leftover spaghetti squash, apples & Z-bars, etc.

Yesterday morning I did make a delicious turkey, bell pepper & mushroom egg white omelet, which I ate with a few grapes.



When I got off work, I quickly hurried to get to the grocery store and buy the stuff to make my Halloween specialties: Spooktacular Oreo Balls! (They aren't really Halloween-specific, but I put Halloween sprinkles on them.



Tomorrow I will post a step-by-step recipe for these. They are sinful, but sinfully DELICIOUS. I brought them to my staff Halloween party today and they were gobbled up immediately!

Last night Kris & I had our weekly Thursday night fun with Paco & Stacia. Kris & Paco play football and Stacia & I do crafts. [Last time we made these wine corkboards.] This time Stacia taught me how to knit!!


Now I'm in the process of making my own scarf.

We went to dinner at Chili's. Kris & Paco love their two-for-one beers, rail drinks and margaritas. I had a Thirsty Thursday margarita on the rocks and half of a cajun chicken sandwich with a few fries. It was really good but even half was too much!


And now, what I've been waiting to show you..... MY HALLOWEEN COSTUMES! Yes, not ONE costume, but TWO awesomely terrific costumes!

I'm not sure how to describe my costume.... I'm gonna go with early 70s disco-cocaine era. I love it!

Right now we're waiting for a couple of friends to come over for a little pre-game Halloween party. I made a quick spread of appetizers:


Fresh cut veggies & ranch dip, assorted crackers and cheese, spinach dip, tortilla chips & two types of salsa, doritos and, of course, OREO BALLS! I always try to serve somewhat healthy things that will still please a crowd.

Ok I will update everyone tomorrow with more Halloween night pics! You guys have GOT to see Kris's costume.

Good morning! It's Thursday, YAY! My last full day of work for the week. :-)


This morning I had an incredible breakfast! Last night, I cooked up an egg white omelet with spinach, tomatoes, mushrooms and a laughing cow cheese wedge. I reheated it this morning for a 1:30 in the microwaved. Very good!

I wanted something else to go with it... but for some reason I didn't feel like fruit today! Weird, I know.

The other day at the grocery store I was looking at the yogurt section and came across some Pumpkin Pie Yogurt. It sounded delicious! But it only came in full fat (bleh!) and in a big container. I was very disappointed! But this morning, I was staring at my container of leftover pumpkin in the fridge and thought "what should I use this pumpkin for?!" And it dawned on me: YOGURT! So I mixed the rest of the canned pumpkin (about 1/4 cup) with maybe 3/4 cup Vanilla Light & Fit. I topped it with some cinnamon and some Pumpkin Flax Seed Cereal of Kris's (w/ raisins in it). DELICIOUS.

Well, once again, I'm rushing to get out the door this morning. Have a good day everyone!
