Good day to forget to set the alarm...

As the title of this post alludes to, I "forgot" to set my alarm last night...


It's cold, rainy, dreary and Kris has the day off. So it was sooooooo nice to just lounge in bed together for a while this morning. We never get to do that anymore, we always have something to get up and do! I am going to head into work in a little bit here, then go to class and the gym. So it's not like I'm playing hooky for the whole day! Just the wee hours of the morning. :-)

For breakfast I took the time to make a wonderfully delicious
Greek Hummus Omelet.

It was so good! Filled with garlic-sauteed spinach and cucumbers, fresh tomatoes and feta cheese. But the secret is the tablespoon of roasted red pepper hummus that whisked into the egg whites before I cooked them.

I also had a few grapes with it, for some fruity goodness.

Wellllllllll....... I suppose I should start getting ready for work. :-( Before I go though, a quick shoutout to Le0pard13 and his blog. He tagged me as a blog that he loves. Thanks, man! I'll continue the tag as soon as I get some free time today.
