Bagel Breakfast and Butternut Squash Soup

Kris and I woke up this morning and realized that we had both taken this day off of work a few weeks ago as a planned "Kris and Alyssa Mental Health Day." Occasionally we do this, and use the day to run errands, watch movies, cook meals and just hang out together. :-)

For breakfast I wanted something simple and cheesy, so I melted slices of mozzarella onto a whole wheat bagel in the toaster oven. This combo is great for any meal!


Then we hung out and watched some movies on Starz: Bad Boys and 30 Days of Night.

Lunch was comforting and healthy. I heated up some organic creamy butternut squash soup, and added some brown rice and onions. On the side I had steamed veggies (broccoli, snap peas, asparagus, red peppers and onions) with parmesan cheese on top. I also had half a piece of toast.


Now I'm going to do some homework while Kris grades tests, and then we'll go run some errands.

I had a very nice, relaxing day off today. I probably should have gotten in a workout... but oh well. Tomorrow's another day.

Around 4pm I had a snack. It was a little 'dessertish' but at least I got some fruit in me today! I had a small bowl of Wild Blueberries & Sweet Cream Frozen Yogurt topped with berries that I thawed out in the microwave. It hit the spot.


I have a TON of fresh vegetables in the fridge right now, so I knew I wanted to incorporate some into dinner. But for my main entree, I decided to make Florentine Salmon Pinwheels. They are basically salmon fillets stuffed with lowfat ricotta cheese, spinach and tomatoes. I baked them at 400 degrees for 15 minutes.



On the side, I had steamed garlic broccoli, cauliflower and mushrooms. And for some reason I was in the mood for bread & butter. I had a slice of 12-grain bread spread with some Brummel & Brown.


I am stuffed right now! Kris and I are watching The Real Housewives of Atlanta. These women crack me up! :-)

Chicken Sausage & Veggies with Rice Noodles

Dinner was delicious & filling- the best kind!


I started by cooking up some rice noodles (about 3 oz.), and then microwaved some Green Giant "Steam in the Bag" potatoes, green beans & peppers. I cup up two chicken sausages (stuffed with gouda cheese & apples) that I'd bought from Wal-Mart last week. I sauted them in a pan with garlic & onions. Then I added the veggies & rice noodles, along with (finally!) the last of my canned diced tomatoes. The "sauce" was a mixture of Sundried Tomato Pesto & Honey Dijon Mustard. I grated some parmesan cheese on top and garnished with some fresh parsley.

YUM YUM! I am exhausted though, and yoga is less than 12 hours away. OH, by the way... my run today was FANTASTIC. I keep getting further and further everyday without feeling tired at all. I love it.
