Troubled Tuesday

I just feel a little off today... I don't know if it's stress, anxiety, fatigue or if I'm getting sick... hopefully tomorrow will be better.

Kris and I enjoyed our day off yesterday. We ran some errands (like sending my ring off to get appraised.. I feel naked!) and then made a delicious Italian dinner. I made Baked Mostaccioli with Chicken Sausage. SOOOOOOOOOO good.


This morning I found it very hard to get out of bed. Kris practically had to drag me. I was (of course) running late and made a very simple, boring breakfast of microwaved egg beaters with turkey and cheese.


Lunch was the highlight meal of the day so far. A delicious salad with turkey, tomatoes, artichokes, broccoli, crackers and parmesan cheese. I also had an apple.



My kids were not very good today. After nap they were very rowdy and I could not WAIT to get out of there. I was pretty hungry when I got home so I ate a new flavor of Larabar that I hadn't tried yet: Cashew Cookie.


It was pretty good! My favorite is still apple pie though. So far, my ranking:

4. Pecan Pie
5. Cherry Pie

I still have a Key Lime Pie in my cupboard to try. Anybody had that one yet?

Hiking and Snacking

What a beautiful day it is today. Kris and I got up early (well, 8:30, which is early on a Saturday) and I made some scrambled egg beaters with green, yellow and red bell peppers, tomatoes, fresh salsa, mushrooms & cheese. YUM YUM!



Around noon we drove out to 7 Mile Creek Park and went for a looooong hike. First we did a steep loop trail that KILLED my quads! Then we went back down to the car for snacks. I had a crispy Gala apple and Kris had a HUGE peach.



We started another trail as we ate them. We did a "Very Difficult" foot trail that brought us up to the "Scenic Overlook." It was so beautiful up there! When we got back down we ate the lunches that I'd packed on a picnic table. Turkey & ham sandwiches with fire roasted red peppers, artichoke hearts, laughing cow cheese spread on one side and sundried tomato pesto on the other! We had Peanut Butter Clif Kids Bars with them.





We were too tired to do anymore hiking so we drove home and now we're watching the Notre Dame vs. Stanford game. GO IRISH!



SOOOOOOOOOOOOOOOOOOOOO beautiful!
