Bunless Buffalo Sliders and Sweet Potato Fries

I am stuffed and yaaaaaaaaaaaawning. The past hour I've just been bumming around Craig's List, looking for a new job. I graduate in December and really want to find a job in the PR/Marketing field, in which I'll have a degree. I'm also looking at administrative assistant positions... pretty much anything with health insurance benefits! Ugh, stressful.


Dinner was so good tonight. I made delicious little Buffalo Sliders.


I used a pound of buffalo burger (I've got like 5 pounds in the freezer, thanks to my grandparents who buy 1/2 a buffalo every year to share with all their kids and grandkids) and mixed in greek dressing, feta cheese, onions, bread crumbs and egg beaters. I shaped it into seven small patties (odd number, I know) and "fried" them in a wok on the stove.

In a separate pan I sauteed mushrooms and onions. I brushed the tops of the burgers with some more greek dressing, added tomato slices, the mushrooms and onions and some Italian blend cheese, then put them in the oven at 400 degrees for four minutes to melt the cheese.


I served them sans bun, w/ sweet potato fries and steamed veggies on the side. I made seven of them, planning to have leftovers for lunches this week, but I obviously underestimated the appetite of my 6'5, 205-pound baseball player fiancee. I had two slides and he ate ALL THE REST. He never ceases to amaze me.



I did feel like I need some dessert tonight though. So I toasted a chocolate VitaTop Muffin and added some sugar free cool whip and a drizzle of chocolate syrup. Perfection.


Okay I'm going to go lay in bed. Tomorrow will be a good day, tomorrow will be a good day, tomorrow will be a good day....

Homemade Med Pizza & Favorite Wedding Dress

After our huge lunch I wasn't real hungry for supper. So I used my last pizza crust and made a light & crispy Med Pizza.


I used roasted red pepper hummus as the sauce, and it was topped with spinach, diced oregano & garlic tomatoes, onions and feta cheese. Delicious.

My two pieces:

For dessert I had one of my guilty pleasures- frozen sugar free coolwhip, drizzled with a tiny bit of chocolate syrup and the best part, Halloween Sprinkles!
Okay, I want everyone's opinion. Of course I'm wedding dress searching already (because that's got to be one of the funnest parts of being engaged) and this dress in the favorite! (Voted on by me, Kris, my mom & dad & brothers). What do you guys think?!?

Well, I finally got around to doing a light workout: abs, legs, stretching, etc. No cardio today though. Tomorrow, for sure.

I picked up Kris around 5:30 today, after sneaking in a quick tanning bed tan. Now, I know this is horrible for me... but I'm not going as Snow White for Halloween, so I need at least a slight browning if I'm going to show any skin whatsoever in a few weeks. I'm only going to go 5 or 6 times, then stop after Halloween. I like to stick to the lotions for the rest of the winter.

We stopped off at Hy-Vee for a quick grocery shop. I picked up a Grande Skinny Decaf Pumpkin Spice Latte at the Starbucks in the store for the ride home.

Then I made a homemade pizza!



I'd bought a couple of pre-baked pizza crusts: Deli-catessen Thin-Style Pizza & Focaccia Crusts. My favorite! A third of the crust is only 80 calories, but packs 3 grams of fiber and 5 grams of protein. And they are delicious. I sprayed the crust with EVOO cooking spray, then sprinkled on some pesto mix. Next went chopped artichoke hearts, white button mushrooms, sliced chicken sausages, tomatoes, goat cheese & Italian blend cheese. I baked it at 400 degrees for 15 minutes and it was perfect. Crispy and delish!



Alongside the pizza I made what I like to call a "restaurant side salad." It's pretty much just a plain salad of packaged romaine lettuce mix, tomatoes & "croutons" (I didn't have croutons so I crumbled some Kashi crackers on top: perfect!). My dressing was homemade buttermilk ranch. Sometimes I just need ranch dressing on my salad, it's a Minnesota thing.

Dessert was a scoop of fat free frozen cool whip, drizzled with dark chocolate syrup and topped with a few Halloween sprinkles! A little sinful, but well worth it.



I'm off to get everything ready for work tomorrow- making lunch, picking out my clothes, etc. I know, I way too organized! Hope everyone had a good Monday. I'm feeling much better, Thank God.
