I decided that Wednesdays are one of my favorite days. Yoga, work, gym, home! And, it's my mid-week break from preschool. (Instead, I deal all day with finicky computers, which sometimes 'act up' more than my 3-year-olds.)
I liked my pre-yoga snack of fruit on Monday, so I decided to do it again! Except today, instead of frozen berries & mango, I had a small bowl of fresh pineapple, cantaloupe & grapes. And, of course, my typical cup of coffee w/ Light Vanilla Soymilk and Sugar Free Coffeemate. (However, I was just reading See Bride Run's blog, and she mentioned that she gave up coffee creamers because of some scary ingredients & trans fat! Yikes, I need to look into that....)


I'm bringing lots of mini-meals to munch on all day. My main "lunch" is something I concocted & made last night. Here's a sneak-peek:


It's a "grilled veggie burrito". The filling is a mixture of sauteed bell peppers, onions & mushrooms, with canned corn, black beans, salsa, a tablespoon of reduced fat veggie cream cheese and tablespoon of Hellman's lowfat mayo. Also, I added some cumin, black pepper & hot sauce. It's all wrapped up in a Flat Out Light Wrap and "grilled" on the stove. I'll reheat it at lunchtime in the microwave-- we'll see if it retains any of the crunch! I can't wait to eat it.
Well, I need to go finish up my beautifying routine & get on the road a little early, since the weatherman says it's pretty foggy out and my road to Mankato runs right along the river. Have a good day everyone!
