Fruit, Yogurt & Oatmeal Parfait

Oh my word was breakfast ever good this morning! I dreamed up this little concoction while I was in the shower this morning:

Fruit, Yogurt & Oatmeal Parfait


I made a small amount of oats on the stove and swirled in some sugar free maple syrup. Then, in a bowl I layered Vanilla Light 'n Fit yogurt (60 calories worth), 1/2 cup of mixed berries (from frozen, but microwaved to defrost) and then the oatmeal.

I added a tiny bit of brown sugar and some slivered almonds on top. MMM MMM GOOD.


Ok, I need to get ready now. Work, then class, then workout, then finally home. Have a good day everyone!

(Note: Anyone who was wondering about the sweet potato fries I had for dinner last night, I actually buy them at my local grocery store. They are Alexia brand. Learn more about them HERE.)
