Yesterday I stopped at the store to pick up a few produce items, and I made a purchase that I am very excited about: sprouts! I loooooooooove sprouts but I always forget to buy them!!

So today I made sure to make a lunch that included them. I had a delicious Veggie Sandwich.

Because of all the red meat I ate yesterday (from the buffalo sliders), I wanted to lay low in the meat department for today's eats. So instead of a turkey or tuna sandwich, I just decided to go for an all-veggie sandwich. It consisted of roasted red pepper hummus, mushrooms, tomatoes & sprouts. Simple but very yummy!

On the side I had petite baby carrots (even smaller than normally baby carrots, they are my favorite!) and JUMBO red grapes.

After class today I headed to the gym for a much-needed workout. However, I had to cut it a little short. I did 15 minutes on the elliptical and 20 minutes on the recumbant bike (hill programs for both) and then I started to do abs. But all of a sudden I felt very weak, dizzy, shaky... so I stopped.

I'm not sure what was wrong... I probably should have brought a pre-workout snack with me, but since I ate lunch so late (2 pm) I thought I would be good to go for a few hours. I guess now I know better for next time.

I have no idea what to make for supper... Kris is playing basketball tonight and won't be home for dinner so it's all up to me!! Hmmm....
